Guess what! Caesar salads have nothing to do with Roman emperors. Legend tells us that the history behind this classic meal starter dates back only to the 1920s. Credit is most often given to an Italian immigrant and successful restauranteur named Caesar Cardini. The story goes that during an especially busy July Fourth rush, Cardini’s kitchen was low on supplies and he had to make do with what he hand on hand. His creation, the Caesar salad---a generous serving of romaine lettuce and crunchy croutons covered and tossed with a rich, creamy dressing made with olive oil, Parmesan cheese, raw eggs yolks, anchovies and garlic with additional grated Parmesan cheese sprinkled on top. Then to “dress up” this dish, he also added the dramatic flair of table-side tossing.

We upped the ante of this classic creation with our own rich and creamy Bacon Caesar Dressing. Made with plenty of crumbly, aged parmesan cheese and robust, savory garlic like a traditional Caesar, but we also added crispy bacon and the telltale zing of Dijon mustard, tart lemon, pepper and spices. Wow!

Simply serve it over your favorite salad fixings, pour it over plain pasta or serve as a dip with raw veggies--It’s great on a BLT too!
